Some jarred pasta sauces can be really high in salt and sugar, which means they are not a good idea to eat too often. Pesto can be made really quickly and in LOTS of ways, so its a great way of making your own sauce, and I guarantee it will be much tastier-Have a go!
A basic recipe would be:
1 Large bunch of basil
Large handful pine nuts (about 80g)
Large handful of Parmesan (about 80g)
A few lugs garlic oil (or 1 small clove of garlic)
A few lugs olive oil
Juice of 1 lemon (not essential)
Salt and Pepper
Put everything into a food processor and whizz it up until everything is smooth and looks like a sauce. Add more oil if its too thick.
The quantities are not exact and you can add more or less to make it how you like it- experiment and create you own pesto! This is great on pasta, on fish, on bread, on chicken- on LOADS of things, so maybe make extra and freeze some so you always some on hand for a tasty healthy dinner!!
You can try lots of different herbs, not just basil, or even a mix. Parsley and coriander can work well.
Also, try different nuts, like almonds or walnuts. There are so many options, so have fun and remember to let me know your ultimate Pesto recipe.
If you are allergic to nuts (or even if your not!), try adding pumpkin seeds instead of nuts, you can even use breadcrumbs!
