We often make mash potato by baking potatoes in the oven, then scooping out the middles, you then put this through a ricer, add butter and seasoning and hey presto-you have delicious fluffy mash. It’s a really easy way to make mash as there’s no peeling involved, but it does leave the potato skins. I was thinking of a good way to use them as I couldn’t bring myself to put them in the bin!
A lot of the goodness of a potato is in the skin, so it’s not just about food waste, it’s about getting loads of healthy stuff into your body! This includes fibre and disease fighting nutrients!
My children really enjoyed these homemade potato skin crisps. They are really good because they solved the problem of wasting the skins, in a very quick, easy and delicious way!!
- Potato skins
- Salt & Pepper
- Rapeseed/Olive Oil
- Pre-heat the oven to 180ºC
- Chop the skins into bite size chunks
- Place on a baking tray and drizzle with enough oil to lightly coat the skins
- Season with salt and pepper
- Place in the oven for 5 minutes
- Leave to cool
Add different flavours to your crisps. You could try paprika, dried oregano, or coriander!
You could still make these if your potato peel is uncooked, just follow the recipe, but leave them in the oven a little longer to crisp up!
For a tasty lunch add grated cheese and ham, pop them under the grill to make it all oozy!
…or why not use them instead of tortillas for some delicious nachos!
